Are you a fan of Mexican food?

for one am a huge fan of Mexican food!!! Taco seasoning is always something that I'm ready to put in my meal...of course...only if the flavor would be appropriate. :P This is a recipe that I came up with today...it's super easy, and full of Mexican flavor!!! Enjoy! 


Mexican Turkey, Bean, & Tomato Fry

1 lb. ground turkey 

coconut oil (unflavored, or you could use olive oil.) 

2 cups black beans (do not rinse or drain.) 

2 cups canned diced tomatoes (do not drain.)

2 Tbsp. + 2 tsp. taco seasoning 

salt 

pepper

onion powder 

1 and 1/3 cup shredded Monterey Jack cheese

1.) Put oil in frying pan, enough so there is a decent amount on the bottom of the pan, your oil is going to help give some moistness to the dish. Fry turkey in oil. 

2.) while frying turkey, in a separate bowl combine beans, tomatoes, taco seasoning, and add salt and pepper to taste.

3.) once meat is done sprinkle onion powder over it. Add to taste, everyone likes a different amount of flavor. (You can always add more onion powder later.) Add the bean and tomato mixture, let cook until some of the wetness has cooked out, and it's thicker. Or cook until it's the desired thickness.

4.) sprinkle cheese over the top, and cover. Once cheese is melted serve and enjoy
